Summer Cocktails : : limoncello collins

So let's kick off June with a bang! After writing my second post of all time here, I decided that it would be so much fun to keep this up all summer by posting Summer Cocktails every Friday. I mean come on, what better season to test out new, amusing, imaginative and refreshing beverages! Serve any of the drinks posted on my blog throughout the summer and I guarantee you will be the finest host in town.

This week we are going with a bit of a twist on the old fashioned Tom Collins which is comprised of Gin, lemon juice, sugar and carbonated water. The first recipe for the Tom Collins appeared in 1876 in an edition of Jerry Thomas’ “The Bartender’s Guide”. Since then, there have been numerous modified versions of it and I’m going to share the newest and tastiest one yet!

Ingredients

16 ounces limoncello (lemon-flavored liqueur)

12 ounces gin

8 ounces fresh lemon juice

24 paper–thin lemon slices

Ice

16 ounces chilled club soda

8 mint sprigs

Preparation

In a pitcher, combine the limoncello, gin and lemon juice. Cover and refrigerate until chilled, at least 2 hours. Press 3 thin lemon slices against the inside of each of 8 collins glasses. Add ice to the glasses. Stir the limoncello mixture and pour it into the glasses. Stir 2 ounces of club soda into each drink and garnish with a mint sprig.

Sit back, sip and appreciate!
